Garlicky Shrimp Pasta With Arugula Salad
- 3 ounces whole wheat penne pasta
- 1/2 tablespoon olive oil
- 1/2 cup shallot finely chopped
- 2 cloves garlic finely minced
- 1/2 pound shrimp medium, peeled and deveined
- 1/2 cup white wine
- 1/2 cup broth pasta
- 2 ounces goat cheese
- 4 cups arugula
- 2 teaspoons olive oil
- 1 pinch salt
- 1 pinch pepper
- Cook pasta according to box directions, reserving 1/2 cup pasta broth.
- In a large non-stick skillet heat 1/2 tablespoon olive oil and add shallots. Cook for 3 - 5 minutes until shallot is very tender. Add garlic, wine and pasta broth reduce by 1/3 and then add shrimp. Cook shrimp 3 - 5 minutes until it just curls. Add goat cheese and toss until cheese melts.
- Add pasta to shrimp mixture.
- Toss arugula with remaining olive oil and season with salt and pepper. Serve with pasta.
