New Year'S Bean Soup

  1. Wash the beans/peas thoroughly.
  2. Place in a large kettle. Cover with water and add the salt.
  3. Soak overnight.
  4. In the morning, rinse again.
  5. Drain and add the water and ham or ham bones.
  6. Bring to a boil and simmer at least 3 hours.
  7. Add the onion, tomatoes, chili powder, garlic, bay leaf, juice of lemon and salt and pepper to taste.
  8. Simmer 2 more hours and enjoy. Freezes well.
  9. Makes 3 quarts.
