Ultimate Healthy Xocai Chip Cookies
- 1 cup peanut butter
- 1/4 cup butter
- 1/2 cup vanilla yogurt
- 2/3 cup brown sugar
- 2/3 cup granulated sugar
- 2 whole eggs
- 1 teaspoon vanilla extract
- 2 cups quick oats
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup dried cranberries
- 10 chocolate Xocai Healthy, Nuggets, coarsely chopped
- At medium speed in a large bowl, beat together first 5 ingredients.
- Then add and beat in eggs and vanilla.
- In a separate bowl, combine remaining ingredients; add to wet mixture.
- Drop by teaspoonfuls onto cookie sheet and bake at 350 degrees for 8 to 12 minutes.
- Makes 36 cookies
