Ultimate Healthy Xocai Chip Cookies

  1. At medium speed in a large bowl, beat together first 5 ingredients.
  2. Then add and beat in eggs and vanilla.
  3. In a separate bowl, combine remaining ingredients; add to wet mixture.
  4. Drop by teaspoonfuls onto cookie sheet and bake at 350 degrees for 8 to 12 minutes.
  5. Makes 36 cookies
