Crepes Filled With Cream And Caramelized Apple

  1. Combine the milk, flour, eggs, sugar, and salt in a bowl. Let rest 30 minutes.
  2. Melt a little butter in a 20 centimeter skillet and pour in a ladleful of batter. Tilt the skillet to spread out the batter. Flip and cook until golden on both sides. Repeat.
  3. Place the apple into a saucepan with the sugar, butter, and cinnamon. Cook on low heat until caramelized and glassy.
  4. Make the pastry cream by adding the cornstarch and egg yolks to 1/2 cup milk. Beat well.
  5. Mix the rest of the milk in a saucepan with the lemon rind, cinnamon, and sugar. Bring to a boil and add the cornstarch mixture. Stir until thick. Remove from heat and add the butter. Mix well.
  6. Assemble the crepes by filling each with a little pastry cream and caramelized apple. Roll, sprinkle with sugar and brown the tops with a kitchen torch.
