Crepes Filled With Cream And Caramelized Apple
- 2 1/8 cups milk
- 1 5/8 cups flour
- 4 eggs
- 1 tablespoon sugar
- 1 pinch salt
- 2 1/8 cups milk
- 2 tablespoons cornstarch
- 1/2 cup sugar
- 4 egg yolks
- 3 1/2 tablespoons butter
- 1/2 lemon
- 1 cinnamon stick
- 3 pippin apples may substitute Granny Smiths, chopped
- 1/2 cup sugar
- 3 1/2 tablespoons butter
- 1 cinnamon stick
- Combine the milk, flour, eggs, sugar, and salt in a bowl. Let rest 30 minutes.
- Melt a little butter in a 20 centimeter skillet and pour in a ladleful of batter. Tilt the skillet to spread out the batter. Flip and cook until golden on both sides. Repeat.
- Place the apple into a saucepan with the sugar, butter, and cinnamon. Cook on low heat until caramelized and glassy.
- Make the pastry cream by adding the cornstarch and egg yolks to 1/2 cup milk. Beat well.
- Mix the rest of the milk in a saucepan with the lemon rind, cinnamon, and sugar. Bring to a boil and add the cornstarch mixture. Stir until thick. Remove from heat and add the butter. Mix well.
- Assemble the crepes by filling each with a little pastry cream and caramelized apple. Roll, sprinkle with sugar and brown the tops with a kitchen torch.
