Poached Chicken And Spicy Melon Salad
- 4 slices ginger peeled
- 3 star anise
- 2 green onions 1 cut into 1-inch slices, 1 finely chopped
- 2 tablespoons soy sauce
- 3 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 2 ounces baby spinach
- 1 cup peas shelled, blanched
- 1 cup cilantro leaves loosely packed
- 1/4 cantaloupe peeled and cubed
- 1 chili pepper seeded and finely chopped
- Place 4 cups water, ginger, star anise, sliced green onion and soy sauce in a large saucepan on medium heat. Bring to a simmer. Add the chicken and reduce the heat to low. Simmer, covered, for 10 mins, until cooked through. Allow to cool in the cooking stock.
- For the dressing, whisk oil, lime juice and sugar in a small bowl.
- Place spinach, peas and 3/4 of the cilantro in a bowl. Add the dressing and toss to coat. Toss the melon, chili pepper, remaining cilantro and chopped green onion in a medium bowl. Remove the chicken from the stock and slice. Serve the spinach mixture with the chicken and spicy melon.
