Bacon And Onion Savory Cake
- hazelnuts chopped
- 2 eggs
- 6 3/4 tablespoons whole milk
- 9/16 cup extra-virgin olive oil
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 5/8 cup pecorino cheese grated
- ground black pepper
- salt
- 3 1/2 ounces smoked bacon diced
- 1 onion peeled and sliced
- Preheat the oven to 180 degrees Celsius.
- In a nonstick pan, toast a handful of hazelnuts.
- In a bowl, mix the eggs, milk, and oil.
- In a separate bowl, mix the flour, baking powder, cheese, and a pinch of black pepper.
- Add the wet ingredients to dry ingredients. Season with a pinch of salt and add the hazelnuts, bacon and onion, setting a little of the sliced onion aside.
- Grease and flour a loaf pan. Pour in the mixture and sprinkle the remaining onion on top.
- Bake for 20 to 25 minutes. Test with a toothpick.
