Grandma'S Classic Ginger Snaps

  1. Sift, then measure flour.
  2. Add salt, baking soda and spices.
  3. Sift twice more.
  4. Cream butter until light and fluffy.
  5. Gradually blend in sugar.
  6. Beat egg and add to molasses.
  7. Add in flour mixture and blanched almonds (if using).
  8. Turn dough onto floured surface and knead dough into 3 rolls, 2 inches in diameter.
  9. Wrap each roll in wax paper and chill overnight in refridgerator.
  10. Cut into slices and bake for 8 - 10 minutes at 350 F on a greased or non-stick cookie sheet.
