Savory Breaded Turkey Cutlets With Stuffing Salsa
- 4 turkey
- 1 egg whites
- 6 whole buttery crackers
- 2 tablespoons promise buttery spread
- 1 cup carrots finely chopped, about 2 medium
- 1/2 cup celery
- 1/2 cup sweet onion
- 1/2 cup cremini mushrooms
- 1 clove garlic finely chopped
- 1 cup baby spinach leaves
- 3/8 teaspoon sprigs fresh rosemary, torn into pieces
- 1/8 teaspoon ground black pepper
- 1/4 cup fat free reduced sodium chicken broth
- Dip turkey into egg white, then evenly coat with cracker crumbs. Melt 1 tablespoon Promise(R) Buttery Spread in 12-inch nonstick skillet over medium heat and cook turkey, turning once, 8 minutes or until turkey is thoroughly cooked. Remove turkey and keep warm.
- Melt remaining 1 tablespoon Spread in same skillet and cook carrots, celery, onion and mushrooms, stirring occasionally, 5 minutes or until tender. Stir in garlic and cook 30 seconds. Add remaining ingredients. Cook, stirring occasionally, 2 minutes or until spinach is wilted. Serve turkey with Vegetable Salsa.
