Coffee Muffins

  1. Preheat the oven to 200 degrees Celsius.
  2. In a bowl, sift the flour, baking powder, baking soda, and salt.
  3. Dissolve the coffee in the milk. Add the butter, eggs, and sugar. Mix well. Add to the flour and mix. Do not overbeat.
  4. Pour the butter into a muffin pan and fill about 3/4 full.
  5. Bake for 25 minutes.
  6. Take out of the oven and let the muffins cool completely.
  7. Dissolve the coffee in the water.
  8. Using an electric mixer or food processor, puree the dissolved coffee, cream cheese, and sugar until smooth.
  9. Cover the cool muffins with the frosting and serve.
