Coffee Muffins
- 2 1/3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 pinch salt
- 2 tablespoons instant coffee
- 1 cup milk
- 1/2 cup butter melted
- 2 eggs
- 1 cup sugar
- 2 tablespoons instant coffee
- 1 tablespoon water
- 150 grams cream cheese
- 7 tablespoons superfine sugar
- Preheat the oven to 200 degrees Celsius.
- In a bowl, sift the flour, baking powder, baking soda, and salt.
- Dissolve the coffee in the milk. Add the butter, eggs, and sugar. Mix well. Add to the flour and mix. Do not overbeat.
- Pour the butter into a muffin pan and fill about 3/4 full.
- Bake for 25 minutes.
- Take out of the oven and let the muffins cool completely.
- Dissolve the coffee in the water.
- Using an electric mixer or food processor, puree the dissolved coffee, cream cheese, and sugar until smooth.
- Cover the cool muffins with the frosting and serve.
