Spicy Rigatoni With Shrimp And Salmon
- 2/3 pound tomatoes slice with a shallow X on the bottom
- 1 1/2 tablespoons olive oil divided
- 8 ounces goat cheese
- 1 1/4 cups vegetable stock
- 2 tablespoons chili paste sambal oelek
- 2/3 pound rigatoni
- 3 tablespoons butter
- 2/3 pound salmon skinless, roughly chopped
- sea salt
- 2 onions small, peeled and finely sliced
- 2 leeks trimmed, washed and sliced
- 2 carrots peeled and julienned
- 8 large shrimp raw, peeled
- 1/3 cup Parmesan shaved
- Scald tomatoes with hot water, then plunge into cold water and remove skins. Dice tomatoes. Heat 1/2 tbsp oil in a pan and cook tomatoes, while stirring, for about 10 mins. Add goat cheese, stock and sambal oelek chili paste.
- Cook rigatoni in boiling salted water according to directions on the package.
- Heat butter in a pan and saute salmon for 4 mins. Season with sea salt and set aside. Add onions, leeks and carrots, and saute for 5 mins. Stir in tomato sauce. Return salmon to the pan, and season.
- Heat 1 tbsp oil in a pan and fry shrimp for 3-4 mins. Season with sea salt. Drain the rigatoni, and add to the salmon sauce. Serve with shrimp. Sprinkle with Parmesan shavings.
