Shrimp With Smoked Salmon And Spicy Bread Sauce
- 2/3 pound shrimp
- bread slices Alentejo, preferably a day old
- 1 onion small, finely chopped
- olive oil to taste
- 2 garlic cloves
- spice
- italian seasoning
- 3 1/2 ounces smoked salmon flakes
- coriander or Chopped pennyroyal
- Steam the shrimp.
- Soak the bread slices in the water used to steam the shrimp.
- Saute the onion in olive oil until translucent. Add the garlic cloves.
- Peel and chop the shrimp.
- Add the shrimp to onion and garlic, and saute slightly, then add the slightly drained bread and whisk until well shred. Season with salt and Italian seasoning.
- Add the salmon flakes.
- Cook lightly, and remove from heat.
- Add pennyroyal, stir well.
- Serve immediately.
