True Italian Spaghetti Carbonara
- 7 ounces pancetta The Taste of Calabria Italian
- 2/3 pound spaghetti
- 5 tablespoons olive oil
- 2 beaten eggs
- salt
- black pepper
- grated pecorino cheese
- In a frying pan add 2 tbsp of olive oil and stir fry the pancetta until golden brown and crispy. When golden brown and crispy set aside to cool down.
- In the meantime cook the pasta in boiling water with salt until aldente. This should be around aprox 15 minutes depending on the pasta.
- Take a wok like pan (or something similar) and add 3 tbsp of oilve oil. When oil is warm add the pancetta and pasta, mix until both ingredientes are well united. At this point add the beaten eggs, black pepper and grated pecorino cheese. Mix well stirring constantly but gently to avoid eggs becoming scramble eggs but yet cook through.
- When all ingredientes are well mix serve and enjoy!
