Low Calorie Blueberry Pancakes

  1. Mix water and baking powder until blended.
  2. In a medium bowl combine VitaMix, water mixture and egg whites. Mix well.
  3. Preheat Non stick skillet or griddle pan to medium high heat or until drops of water sizzle on surface.
  4. Optional: Spray cooking surface well with no cal/low cal cooking spray (We like Smart Balance(R) Spray).
  5. Scoop batter from mixing bowl using 1/4 cup measuring cup and pour on to cooking surface.
  6. Add 3-5 blueberries to batter side of pancake.
  7. Cook until small bubbles form on tops & edges of pancakes (about 5 minutes).
  8. Turn pancakes over and cook other side until golden brown.
