Low Calorie Blueberry Pancakes
- 1 package bran Blue, VitaMix
- 2 egg whites
- 1 cup water
- 1 teaspoon baking powder
- 1/2 cup fresh blueberries
- 1 tablespoon syrup Aunt Jemima(R) Lite, 25 calories
- 1/2 tablespoon promise (R) Fat-Free Buttery Spread, 2.5 calories
- Mix water and baking powder until blended.
- In a medium bowl combine VitaMix, water mixture and egg whites. Mix well.
- Preheat Non stick skillet or griddle pan to medium high heat or until drops of water sizzle on surface.
- Optional: Spray cooking surface well with no cal/low cal cooking spray (We like Smart Balance(R) Spray).
- Scoop batter from mixing bowl using 1/4 cup measuring cup and pour on to cooking surface.
- Add 3-5 blueberries to batter side of pancake.
- Cook until small bubbles form on tops & edges of pancakes (about 5 minutes).
- Turn pancakes over and cook other side until golden brown.
