Broccoli Soup

  1. Wash and trim broccoli.
  2. Separate stalks and cut into bite-size pieces.
  3. In a large saucepan or soup pot over medium heat, saute onion and garlic in butter or oil until the onion is soft but not brown.
  4. Add broccoli (save a few small flowerets for water and garnish), potato, chicken broth, pepper and herbs.
  5. Bring to a boil.
  6. Lower heat and simmer for 15 to 20 minutes.
