Broccoli Soup
- 1 head fresh broccoli (about 1 1/2 lb.)
- 1 Tbsp. butter or olive oil
- 1 medium onion, chopped
- 1 clove garlic, minced or 1/4 tsp. garlic powder
- 1 potato, pared and diced
- 1/8 tsp. ground nutmeg
- 1 can (about 13 oz.) chicken broth or 1 1/2 c. homemade chicken broth
- ground black pepper to taste or dash of cayenne pepper
- parsley or basil to taste
- 1 c. low-fat milk
- 3 Tbsp. grated Parmesan or Romano cheese
- Wash and trim broccoli.
- Separate stalks and cut into bite-size pieces.
- In a large saucepan or soup pot over medium heat, saute onion and garlic in butter or oil until the onion is soft but not brown.
- Add broccoli (save a few small flowerets for water and garnish), potato, chicken broth, pepper and herbs.
- Bring to a boil.
- Lower heat and simmer for 15 to 20 minutes.
