Rosemary Potato Focacia
- 3 1/2 ounces boiled potatoes
- 2 9/16 cups bread flour
- 3 3/8 tablespoons olive oil
- 7/8 cup water
- 1 tablespoon fresh yeast
- 1 5/16 teaspoons fine salt
- kosher salt to garnish
- rosemary to garnish
- In a large bowl, mix all ingredients together and knead for about ten minutes.
- Transfer to a lightly oiled large bowl, cover with a cotton towel and let it rise for at least 3 hours.
- Preheat oven at 250u0b0C (approximately 480u0b0F).
- Transfer dough onto a greased baking sheet.
- With hands, press dough and stretch to cover entire tray.
- Make small indentations with fingertips and sprinkle with kosher salt and rosemary.
- Let rise for another hour.
- Lower oven temperature to 200u0b0C (approximately 400u0b0F).
- Bake for 20-25 minutes. Cool on a rack.
