Rosemary Potato Focacia

  1. In a large bowl, mix all ingredients together and knead for about ten minutes.
  2. Transfer to a lightly oiled large bowl, cover with a cotton towel and let it rise for at least 3 hours.
  3. Preheat oven at 250u0b0C (approximately 480u0b0F).
  4. Transfer dough onto a greased baking sheet.
  5. With hands, press dough and stretch to cover entire tray.
  6. Make small indentations with fingertips and sprinkle with kosher salt and rosemary.
  7. Let rise for another hour.
  8. Lower oven temperature to 200u0b0C (approximately 400u0b0F).
  9. Bake for 20-25 minutes. Cool on a rack.
