Cottage Cheese Margarita Pizza
- 1 whole wheat pizza dough ready made
- 1 tablespoon olive oil
- 1 garlic clove minced
- 5 ounces part-skim mozzarella cheese shredded
- 2 tablespoons grated Parmesan cheese fresh
- 1 teaspoon fresh parsley chopped
- 1/4 teaspoon dried oregano
- 3/4 cup lowfat cottage cheese Umpqua Dairy
- 1 tomato medium, thinly sliced, remove excess moisture with paper towel

- Preheat oven to 400 degrees.
- Lightly coast fingertips with olive oil, press and stretch dough evenly on pizza pan/stone until about 10-12 inches in diameter.
- In saucepan, heat 1 tablespoon olive oil, add garlic and cook until golden. Brush garlic mixture over dough.
- Sprinkle oiled dough with half of mozzarella cheese. Bake 10 minutes at 400 degrees.
- Combine parsley, Parmesan cheese and oregano. Remove pizza from oven and drop natural lowfat cottage cheese in 8 rounded piles in a circular pattern onto pizza. Sprinkle with Parmesan mixture. Top with tomato slices. Sprinkle remaining mozzarella cheese over the top. Bake 10 minutes longer.
- Remove from oven and add fresh basil and spinach leaves last to avoid burning. Cook for 5 more minutes and serve.
