Omelette With Avocado
- 1/4 avocado diced
- 1 tablespoon light sour cream
- 1/2 jalapeno finely diced
- 2 scallions including the stem, finely diced
- 1 tablespoon prepared salsa
- lime
- juice
- 4 eggs
- salt and ground black pepper
- 2 teaspoons butter
- 1/2 cup chihuahua cheese may substitute mozzarella, shredded
- Mix the avocado, sour cream, jalapeno, scallions, salsa, and lime together in a bowl.
- Whisk the eggs together and add salt and pepper.
- Heat a nonstick skillet at medium-high heat, add 1 teaspoon of butter and let melt. Pour the eggs into the skillet and let cook nearly through.
- Sprinkle the cheese and half the avocado mixture onto half of the omelette and fold in half. Cook for 20 seconds and place onto a serving dish.
- Repeat with the other two eggs.
