Spaghetti, Mushroom And Prosciutto Frittata

  1. Preheat the oven to 350u0b0F. Lightly grease 4 5-inch individual pie pans.
  2. Heat the oil in a large frying pan on high. Saute the leek, mushrooms, prosciutto and garlic for 2-3 mins until tender. Add peas and remove from heat. Stir in the eggs, cheese, spaghetti and mint. Season to taste. Divide the mixture evenly between the prepared pans. Bake for 10-12 mins until set. Serve with salad and crusty bread.
