Spaghetti Bolognaise
- 9/16 pound spaghetti
- 4 tablespoons Parmesan cheese
- 1 tablespoon olive oil
- 4 1/4 tablespoons butter
- 2 onions medium
- 1 celery
- 2 teaspoons garlic crushed
- 2 1/4 pounds beef minced
- 1 cup red wine
- 4 1/8 cups crushed tomatoes
- beef stock
- 1 teaspoon oregano
- 1 bayleaf
- 2 tablespoons tomato paste
- 1 teaspoon cumin ground
- salt
- pepper
- Finely dice onion and celery.
- Heat oil and butter in large pan, add onions, celery and garlic, cook until onions are transparent. Add meat, mash well. Stir meat until lightly browned.
- Add wine, undrained chopped tomatoes, stock, tomato paste and herbs and spices. Stir until sauce boils and thickens, reduce heat, simmer gently uncovered for 1 hour, stirring occasionally.
- Cook pasta in boiling salted water until al dente, drain well and season lightly. Serve hot with sauce and parmasan cheese.
