Shaking Pork
- 1/2 pound pork loin thinly sliced
- 1/2 cup pineapple 1/4-inch slice
- 1 tomatoes julienne
- 4 leaves collard greens large chunks
- 1/4 bunch bok choy large chucks
- 4 basil leaves chiffonade
- 1/4 cup oil
- 8 cloves garlic sliced
- 1/2 red onion julienne
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 3 tablespoons honey
- 1 teaspoon fish sauce
- 3 tablespoons lime juice
- 3 tablespoons mirin
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1. Mix all ingredients for sauce and set aside
- 2. Season pork with dry rub and 4 tablespoons of sauce, let marinate for 2 hours
- 3. Heat a wok and add collards and saute for 3 minutes, add pork and saute additional 4 minutes. Add Remaining ingredients and garnish with tomatoes and basil.
