Meatballs With Couscous Salad
- 1 slice white bread toasted, broken into chunks, soaked in cold water for 5 mins, squeezed dry
- 8 3/4 ounces lean ground beef
- 1/2 white onion finely chopped
- 2 tablespoons cilantro leaves fresh, chopped
- 1 egg lightly beaten
- 1 tablespoon olive oil
- 15 ounces couscous
- 10 1/2 ounces cherry tomatoes quartered
- 1 cucumber quartered lengthwise, sliced
- 1 red onion small, halved, thinly sliced
- 2 tablespoons lemon juice
- 1 teaspoon cumin seeds
- yogurt to serve
- Combine breadcrumbs, ground beef, onion, 1 tbsp cilantro and egg. Season. Shape into 16 small meatballs.
- Lightly coat a large frying pan with oil. Cook meatballs over high heat for 5-7 mins, until browned and cooked through. Set aside.
- Bring olive oil and 2 cups water to a boil. Add couscous and cook over low heat until water is absorbed. Fluff with a fork to separate grains. Remove from heat. Toss with remaining ingredients, except yogurt. Serve with meatballs and yogurt.
