Goddess Goatmilk Yogurt

  1. Pour the starter/milk mixture into two VERY clean pint jars. I use wide mouth pint Mason jars with plastic lids. (The widemouth jars are shorter and fit better into the water bath. But anything will work, even plastic jars.
  2. Place in a large enough pan (the taller the better). Fill the pan with hot tap water, not boiling), up to the bottom of the screw on lids. Place lid on pan.
  3. Place the kettle on the stove and turn on the heat to the very lowest setting. You should be able to leave your finger on the burner comfortably. You are aiming for about 108 F to 112 F. Put a lid on the pan and set your timer for 8 hours.
  4. You can do this over night if you are absolutely sure the burner won't get too hot. Too hot kills the beneficial bacteria. Try using your oven on the lowest setting if the burner is too hot.
  5. When 8 hours is up, open one of the jars and tip it slightly to see if it has set slightly. If yes, place the yogurt in the fridge and eat when cold. It will set more as it cools.
  6. I add vanilla, stevia (0 calorie natural sweetener), granola and berries to individual servings for a sweet dessert like treat.
