Broccoli Quiche
- 1 (9-inch) unbaked pastry shell
- 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
- 1/2 c. chopped onion
- 2 Tbsp. margarine or butter
- 1 c. light cream or milk
- 3 eggs
- 1 Tbsp. chicken flavor instant bouillon
- 1/8 tsp. ground nutmeg
- 1 1/2 c. shredded Swiss cheese
- 1 Tbsp. flour
- 1 sliced hard-cooked egg
- Preheat oven to 425u0b0.
- Bake pastry shell 8 minutes.
- Remove from oven.
- Reduce oven to 350u0b0.
- Cook onion in margarine until tender. Beat together cream, eggs, bouillon and nutmeg. Toss cheese and flour.
- Add to egg mixture along with remaining ingredients, except hard-cooked egg.
- Turn in prepared shell. Bake 30 minutes or until set.
- Let stand 10 minutes before serving.
- Garnish with hard-cooked egg and parsley (optional). Makes 6 servings.
