5-Bean Chili

  1. Saute onions in oil over medium-high heat.
  2. Cook until onion is transluscent.
  3. Add ground beef and garlic.
  4. Brown and drain (do not scorch garlic).
  5. Stir in remaining dry ingredients, except beans. Hand-crush tomatoes and add juice and all to mixture.
  6. Add beans and beer.
  7. Simmer 1 hour, stirring occasionally.
  8. Taste and adjust seasonings if desired (more cayenne and hot red pepper flakes for hotter chili).
