5-Bean Chili
- 3 lb. ground beef
- 1 chopped onion
- 1 can light red kidney beans
- 1 can chick peas
- 1 can dark red kidney beans
- 1 can pinto beans
- 1 can black-eyed peas
- 1 (16 oz.) whole tomatoes, hand crushed
- 1 (12 oz.) can beer
- 2 cloves garlic
- 2 tsp. salt
- 2 tsp. cumin
- red pepper flakes to taste
- 2 Tbsp. chili powder
- 1/2 to 1 tsp. cayenne pepper
- olive oil
- Cheddar cheese
- Saute onions in oil over medium-high heat.
- Cook until onion is transluscent.
- Add ground beef and garlic.
- Brown and drain (do not scorch garlic).
- Stir in remaining dry ingredients, except beans. Hand-crush tomatoes and add juice and all to mixture.
- Add beans and beer.
- Simmer 1 hour, stirring occasionally.
- Taste and adjust seasonings if desired (more cayenne and hot red pepper flakes for hotter chili).
