Sweet Cucumber & Onion Pickles
- 1 cucumber large organic
- 1 red onion
- 2 teaspoons pickling spice
- 1 teaspoon dried dill
- 1/4 teaspoon turmeric
- 3 tablespoons sea salt for sprinkling
- 1 1/4 cups white vinegar
- 1 1/2 cups sugar
- Wash the cucumber well then cut into slices (about 3mm thick).
- Peel and slice the red onion into thin strips.
- Place the vegetables in a colander and sprinkle with the sea salt. Allow to stand for about 2- 2.5 hours or until the veg no longer 'drip'.
- Drain then rinse them under plenty of cold running water. Keep turning them over with your hands to make sure the veg at the bottom of the sieve gets rinsed properly too.
- Allow them to drain whilst you prepare the spiced vinegar.
- Place the vinegar, sugar and spices in a saucepan and bring to the boil. Let it simmer gently for 3-4 mins. Whilst it's simmering, layer the cucumber and onion in a large sterilized jar (750ml) or use smaller jars if you wish.
- Pour the vinegar over the cucumbers making sure you get plently of the spices (you might not need all of the vinegar). Fill it right up to the brim with liquid then seal tightly.
- Place in the fridge and allow to mature for about 4 weeks before opening them. Unopened, they will keep for about 3 - 4 months.
