Sausage Baked With Sweet Potatoes & Apples
- sweet potatoes 8 lg.
- 2 pounds sausage meat
- apples 8 lg.
- salt
- light brown sugar
- milk
- Drop sweet potatoes in boiling water to cover. Cook, covered until tender, about 25 minutes. Drain well and cool enough to be handled. Peel and cut into thin slices.
- Preheat oven to 350 degrees.
- Grease a 2 1/2 quart casserole dish. Cover the bottom with half the sweet potatoes.
- Shape sausage into 8 flat cakes and brown lightly in a skillet. Drain on paper towels.
- Pare apples and cut into thick slices.
- Place meat cakes on sweet potatoes in casserole and cover with all the apples. Sprinkle lightly with salt and brown sugar.
- Place remaining sweet potatoes over the apples. Brush with milk and sprinkle with brown sugar. Bake 45 minutes. Makes 8 servings.
