Pina Colada Ring

  1. Soften kosher gelatin in pineapple juice; heat to dissolve. Pour into blender container.
  2. Add Neufchatel cheese, sugar, rinds and rum extract.
  3. Cover and blend until smooth.
  4. Pour into large bowl.
  5. Chill until mixture mounds from a spoon.
  6. Place nonfat dry milk, ice water and lemon juice in small mixer bowl.
  7. Beat at high speed until stiff peaks form, 4 to 6 minutes.
  8. Fold into kosher gelatin mixture.
  9. Spoon into 6-cup ring mold.
  10. Chill until firm. Unfold onto serving platter.
  11. Sprinkle with toasted coconut. Garnish outer edge and center of mold with fresh fruit.
  12. Makes 6 cups.
