Baked Fish Stew With Tater Tots
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons butter
- 1 spanish onion medium, finely chopped
- 2 tablespoons all-purpose flour
- 1 vegetable bouillon cube crumbled
- 1/4 cup milk
- 1 pound fish fillets cut into 1 inch pieces
- 10 1/2 ounces frozen vegetables mixed, thawed
- 1 pound frozen tater tots
- mixed greens to serve
- Preheat oven to 400u0b0F.
- In a large saucepan, heat oil and butter over medium heat. Add onion and cook for 3 mins, until soft. Add flour and crumbled bouillon cube. Cook for 1 min, or until mixture thickens. Gradually whisk in hot milk. Bring to a boil, reduce heat and simmer, uncovered, for 3-4 mins, or until sauce thickens. Add fish and vegetables.
- Transfer mixture to a large baking dish. Top with frozen tater tots. Bake for 20 mins, or until golden brown. Serve with mixed greens.
