Russian Meatballs In A Wild Asparagus Sauce
- 1 slice bread torn
- 1 dash milk
- 1 1/8 pounds ground meat
- 2 garlic cloves peeled and minced
- 1 egg
- 1 cup Parmesan cheese grated
- ground black pepper
- salt
- 1 tablespoon vegetable oil
- 1 onion peeled and chopped
- 1 leek chopped
- 1 wild asparagus bundle, trimmed and chopped
- 2 1/8 cups vegetable broth
- Soak the pieces of bread in the milk.
- In a bowl, mix the ground meat, garlic, egg, cheese, and the bread. Season with salt and black pepper.
- Mix thoroughly using a fork and form into meatballs.
- Fry in a tablespoon of oil. Brown on all sides, remove the meatballs and drain on paper towel. Set aside.
- In the same skillet, saute the onion, leek,, and asparagus, for 10 minutes..
- Add the vegetable broth and simmer for 15 minutes.
- Use an immersion blender and puree into a sauce until smooth.
- Place the sauce in a saucepan and add the meatballs. Cook for about 5 minutes to bring out the flavors and serve.
