Russian Meatballs In A Wild Asparagus Sauce

  1. Soak the pieces of bread in the milk.
  2. In a bowl, mix the ground meat, garlic, egg, cheese, and the bread. Season with salt and black pepper.
  3. Mix thoroughly using a fork and form into meatballs.
  4. Fry in a tablespoon of oil. Brown on all sides, remove the meatballs and drain on paper towel. Set aside.
  5. In the same skillet, saute the onion, leek,, and asparagus, for 10 minutes..
  6. Add the vegetable broth and simmer for 15 minutes.
  7. Use an immersion blender and puree into a sauce until smooth.
  8. Place the sauce in a saucepan and add the meatballs. Cook for about 5 minutes to bring out the flavors and serve.
