Wu Xi Spareribs
- 2 1/4 pounds pork spareribs
- 4 tablespoons sugar
- 5 ginger slices
- 4 tablespoons rice vinegar dark
- 2 teaspoons chili bean sauce
- 2 tablespoons soy sauce
- 1 teaspoon tomato paste
- 2 teaspoons spring onion chopped
- Cut spareribs into medium-size pieces
- Put ribs in boiling water. When water start again to boil, drain
- Stir-fry ribs on high heat with little of oil until it brown from each side. Remove from the wok
- Add to wok sugar, stir on medium heat until it melted and darken
- Add pork ribs, ginger slices, spring onion and fry a little
- Pour dark rice vinegar, chili-bean sauce, soy sauce and tomato paste. Stir
- Add water to cover the ribs and boil about 1 hour untill water is almost evaporate and sauce become thick
