Wu Xi Spareribs

  1. Cut spareribs into medium-size pieces
  2. Put ribs in boiling water. When water start again to boil, drain
  3. Stir-fry ribs on high heat with little of oil until it brown from each side. Remove from the wok
  4. Add to wok sugar, stir on medium heat until it melted and darken
  5. Add pork ribs, ginger slices, spring onion and fry a little
  6. Pour dark rice vinegar, chili-bean sauce, soy sauce and tomato paste. Stir
  7. Add water to cover the ribs and boil about 1 hour untill water is almost evaporate and sauce become thick
