Chicken Breast With Orange And Chorizo
- 4 chicken breasts or other white meat with skin on
- 3 carrots
- 2 parsnips
- 2 sweet potatoes
- 2 tablespoons olive oil
- 1 onion
- 1 sprig fresh thyme
- 2 1/2 ounces chorizo mild, cut into small pieces
- 1 onion
- 1 orange
- 1 11/16 cups chicken broth
- Preheat oven to 180u0b0C.
- Peel the vegetables, wash and cut them into medium sized pieces.
- Heat the olive oil in a pan and fry the chicken pieces on all sides until they become golden brown. Set aside in a plate.
- Add the onion to the frying pan and cook for 3 to 4 minutes.
- Add the vegetables, the fresh thyme, and the chorizo. Cook for 4 to 5 minutes, stirring regularly.
- Add the orange juice.
- Remove from heat.
- Place the pieces of chicken in a cooking dish and pour the broth and vegetables over it.
- Add salt and pepper to taste and cook in the oven for 35 minutes.
- Regularly baste the dish with the broth on the bottom of the dish.
- Remove the dish from the oven. Remove the chicken pieces and cover them in aluminium foil.
- If desired, heat a frying pan and reduce the broth.
- To serve, pour broth over chicken.
