Chicken Breast With Orange And Chorizo

  1. Preheat oven to 180u0b0C.
  2. Peel the vegetables, wash and cut them into medium sized pieces.
  3. Heat the olive oil in a pan and fry the chicken pieces on all sides until they become golden brown. Set aside in a plate.
  4. Add the onion to the frying pan and cook for 3 to 4 minutes.
  5. Add the vegetables, the fresh thyme, and the chorizo. Cook for 4 to 5 minutes, stirring regularly.
  6. Add the orange juice.
  7. Remove from heat.
  8. Place the pieces of chicken in a cooking dish and pour the broth and vegetables over it.
  9. Add salt and pepper to taste and cook in the oven for 35 minutes.
  10. Regularly baste the dish with the broth on the bottom of the dish.
  11. Remove the dish from the oven. Remove the chicken pieces and cover them in aluminium foil.
  12. If desired, heat a frying pan and reduce the broth.
  13. To serve, pour broth over chicken.
