Apple And Potato Fritatta

  1. Directions: Preheat oven to 375 degrees.
  2. In a large saucepan over medium heat add potatoes in a single layer with 1 tbsp olive oil.
  3. Cook 5 minutes each side until just browned and opaque.
  4. Cook potatoes in batches if you have to.
  5. In the mean time crack the eggs into a large bowl and whisk together with a splash of water.
  6. Add in the carrots, celery, and salt.
  7. While the last batch of potatoes are baking thinly slice apples and onions.
  8. Add to pan with a tablespoon of olive oil after removing potatoes and cook until softened stirring occasionally.
  9. Once soft remove everything from pan add a tablespoon of oil and the egg mixture.
  10. Layer apples, onions, and potatoes into pan and cook 10 minutes or until edges are coming away from the pan.
