Apple And Potato Fritatta
- 3 small potatoes
- 3 tablespoons olive oil
- 8 eggs
- 2 medium carrots peeled and grated
- 2 stalks celery
- 1 onion small
- 1 Fuji Apple
- 1/2 cup extra sharp cheddar cheese
- Directions: Preheat oven to 375 degrees.
- In a large saucepan over medium heat add potatoes in a single layer with 1 tbsp olive oil.
- Cook 5 minutes each side until just browned and opaque.
- Cook potatoes in batches if you have to.
- In the mean time crack the eggs into a large bowl and whisk together with a splash of water.
- Add in the carrots, celery, and salt.
- While the last batch of potatoes are baking thinly slice apples and onions.
- Add to pan with a tablespoon of olive oil after removing potatoes and cook until softened stirring occasionally.
- Once soft remove everything from pan add a tablespoon of oil and the egg mixture.
- Layer apples, onions, and potatoes into pan and cook 10 minutes or until edges are coming away from the pan.
