Poached Eggs & Lentil Hash
- 4 cups lentils pre-cooked or canned
- 1/2 red onion diced
- 1 yellow bell pepper large, diced
- 4 fresh tomatoes medium, diced
- 5 fresh mushrooms large, sliced
- 1 1/2 cups baby kale
- 2 tablespoons olive oil
- 1 teaspoon seasoning Herbs de Provence
- 2 teaspoons Sriracha sauce
- salt
- 6 eggs poached
- Pre-cook your lentils (this can de done a day or two in advance)nf you are using canned, drain & rinse
- Start your egg poaching (method of choice)
- Heat oil in heavy skillet
- Add onions and Herb de Provence seasoning
- Saute for 5 minutes
- Add peppers and cook for 5 minutes
- Add lentils, mushrooms and tomatoes and cook for 5 minutes
- Add kale and cook for 1 minute
- Remove from heat
- Add Sriracha sauce and mix
- Season with salt & pepper
- Spoon into serving bowl
- Tope with poached egg
- Garnish with kale
- ENJOY!!
