Poached Eggs & Lentil Hash

  1. Pre-cook your lentils (this can de done a day or two in advance)nf you are using canned, drain & rinse
  2. Start your egg poaching (method of choice)
  3. Heat oil in heavy skillet
  4. Add onions and Herb de Provence seasoning
  5. Saute for 5 minutes
  6. Add peppers and cook for 5 minutes
  7. Add lentils, mushrooms and tomatoes and cook for 5 minutes
  8. Add kale and cook for 1 minute
  9. Remove from heat
  10. Add Sriracha sauce and mix
  11. Season with salt & pepper
  12. Spoon into serving bowl
  13. Tope with poached egg
  14. Garnish with kale
  15. ENJOY!!
