Quesadillas With Onion Salsa
- 2 tablespoons lemon juice + extra for sprinkling
- 1 teaspoon sugar
- 4 tablespoons olive oil
- 1 green chilli deseeded and finely chopped
- 2 red onions large, peeled and finely diced
- 8 sprigs fresh oregano little set aside for garnish, remainder chopped
- 2 avocados peeled, stoned and thinly sliced
- 7/8 cup soured cream
- 1/4 teaspoon cayenne pepper
- 8 flour tortillas
- 1 3/4 cups cheddar grated
- oil for brushing
- In a bowl, mix the lemon juice, sugar and olive oil. Season with salt and stir in the chili, onion and oregano.
- Sprinkle the avocados with lemon juice. In a bowl, mix the sour cream and cayenne pepper. Spread the sour cream mixture over 4 tortillas, top with the avocado slices and sprinkle with the cheese. Top with the remaining tortillas and press down. Brush both sides with oil.
- Heat a frying pan and warm the quesadillas for 2 mins on each side. Remove from the pan and cut into wedges. Garnish with oregano and serve with the salsa.
