Orange-Glazed Chicken
- 3 chicken breast halves boneless, skinless, cut in thin strips
- 1 tablespoon oil
- 1 1/2 cups chicken broth
- 1/2 cup orange juice
- 2 tablespoons soy sauce reduced sodium
- 1 tablespoon cornstarch
- 1 teaspoon brown sugar
- 1/2 teaspoon ginger ground
- 1/2 teaspoon garlic powder
- 8 ounces snap peas frozen, thawed, drained
- 10 ounces baby carrots frozen deluxe, thawed, drained
- 1 1/2 cups instant brown rice MINUTE
- Cook and stir chicken in hot oil in large skillet until lightly browned.
- Stir broth, orange juice, soy sauce, cornstarch, sugar, ginger and garlic powder in medium bowl.
- Add to skillet and bring to boil.
- Stir in vegetables and rice.
- Return to boil.
- Cover, reduce heat and simmer 5 minutes.
- Remove from heat and stir.
- Cover and let stand 5 minutes.
- Fluff with fork.
- Makes 4 servings.
