Curried Pork Meatballs With Penne
- 8 3/4 ounces penne
- 1 tablespoon vegetable oil
- 28 ounces pork sausages
- 20 meatballs
- 8 3/4 ounces butternut squash peeled, cut into 3/4 inch pieces
- 2 medium zucchini cut into 3/4 inch pieces
- 1 clove garlic minced
- 2 teaspoons mild curry powder
- 3/4 cup heavy cream
- 2 ounces baby spinach shredded
- Cook pasta in boiling salted water for 10-12 mins, or until al dente. Drain.
- Meanwhile, heat oil in a large frying pan over medium-high heat. Cook meatballs for 5 mins. Add squash, zucchini and garlic. Cook for 3-4 mins, or until vegetables are golden. Add curry powder and cook for 1 min. Add heavy cream. Bring to a boil, reduce heat and simmer for 5 mins, or until thickened slightly.
- Add pasta and spinach and toss until spinach wilts.
