Cod Chowder
- 2 slices bacon finely chopped
- 2 stalks celery finely chopped
- 1 onion finely chopped
- 1 large potato peeled, diced
- 2 tablespoons all-purpose flour
- 2 cups milk
- 8 3/4 ounces smoked cod skin removed, chopped
- 10 ounces corn kernels drained
- 1 green bell pepper deseeded, chopped
- 1 tablespoon fresh parsley chopped, to serve
- Place bacon, celery and onion in a large pan over medium heat. Saute for 2-3 mins, until onion is tender. Add potato and cook for 1 min. Add 2 cups water. Bring to a boil then reduce heat and simmer, covered, for 10 mins.
- Combine flour with a little milk to form a smooth paste then add to pan with remaining milk, stirring constantly, until sauce boils and thickens. Season to taste. Add cod, corn and pepper. Simmer for 5 mins. Serve topped with parsley.
