Orange And Cream Cake Dream
- 18 1/4 ounces fudge cake mix dark chocolate
- 3 cups bittersweet chocolate chips mini, divided
- 3 large eggs
- 1 1/3 cups buttermilk
- 1/2 cup vegetable oil
- 1 tablespoon orange zest
- 3 oranges peeled and cut into rounds
- 1 3/4 cups heavy cream
- 12 ounces whipped cream
- 1 tablespoon Grand Marnier Liqueur or 1/2 tsp orange extract
- 1/2 pint fresh raspberries
- fresh mint for garnish
- orange slices for garnish
- Heat oven to 350u0b0F. Grease three 9-inch cake pans. Make cake mix according to package directions, substituting water with buttermilk and adding orange zest. Fold in 1 cup mini chips. Divide batter evenly among prepared pans. Bake for 15-17 mins or until toothpick inserted in the center comes out clean. Let cool for 10 minutes. Remove the cupcakes from pans. Let cool completely.
- In a saucepan, bring cream to just under boil. Remove from heat. Add remaining mini chips. Let stand for 5 mins. Whisk until smooth. Cool to room temperature. Stir liqueur or orange extract into the whipped cream. Transfer topping mixture to piping bag fitted with open star tip, like Ateco # 822nd. Place 1 cake layer on a platter and spread with 1/3 of chocolate mixture. Pipe 1/3 of whipped topping mixture over chocolate. Arrange slices of 1 sliced orange topping over. Repeat layering for remaining cake layers. Garnish.
