Confit Pork Belly With Spring Onion Mayo And Gose Honey

  1. 1. For the Pork Belly: Combine salt, brown sugar, black pepper, garlic and thyme, toss with belly and let cure overnight
  2. 2. Next day, heat fat to simmer, add belly and poach until tender. Chill, portion and reserve
  3. 3. For the Spring Onion Mayo: Blanch spring onions, puree and fold into mayonnaise
  4. 4. For the Gose Honey: Reduce beer to syrup and add honey
  5. 5. To serve: Dredge pork belly in flour and fry at 350u0b0F until crispy. Plate Spring Onion Mayo, top with crispy pork belly, drizzle with Gose Honey and top with Garnish
