Confit Pork Belly With Spring Onion Mayo And Gose Honey
- 1 pork belly skinned and cubed
- 2 tablespoons salt
- 2 tablespoons brown sugar
- ground black pepper To taste
- 3 cloves garlic smashed
- 4 sprigs thyme
- 6 cups fresh pork fat
- all-purpose flour As needed
- 2 spring onions greens only
- 2 cups mayonnaise
- 1 cup Gose or sour beer
- 1/4 cup honey
- 1. For the Pork Belly: Combine salt, brown sugar, black pepper, garlic and thyme, toss with belly and let cure overnight
- 2. Next day, heat fat to simmer, add belly and poach until tender. Chill, portion and reserve
- 3. For the Spring Onion Mayo: Blanch spring onions, puree and fold into mayonnaise
- 4. For the Gose Honey: Reduce beer to syrup and add honey
- 5. To serve: Dredge pork belly in flour and fry at 350u0b0F until crispy. Plate Spring Onion Mayo, top with crispy pork belly, drizzle with Gose Honey and top with Garnish
