Light And Easy Mac And Cheese!!!
- 16 ounces cottage cheese
- 8 ounces salsa your favorite
- 8 ounces shredded Monterey Jack cheese
- 1/4 cup milk
- 1 pound macaroni your favorite
- 2 tablespoons butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1 dash salt
- 1/2 teaspoon paprika

- Place cottage cheese and butter in the food processor and process until smooth. Add the salsa and seasonings and give a few good spins to incorporate the salsa.
- Prepare a baking dish with a rub down of butter. Add the cooked macaroni and the prepared cottage cheese. Add the milk and 1/2 of the shredded cheese and toss. Top with the remainder of the cheese.
- Bake 20-25 minutes.
