Minestrone
- 2 medium onions, sliced
- 3 medium tomatoes, sliced
- 3 carrots
- 3 celery stalks, sliced
- 4 cabbage leaves, coarsely chopped
- 4 medium zucchini, sliced
- 2 medium potatoes, coarsely chopped
- 1 lb. fresh peas
- 1 lb. fresh green beans, cut in 1-inch lengths
- 4 Tbsp. oil
- 1 1/2 qt. water
- 2 to 3 basil leaves
- 1 c. tortellini or other pasta
- Saute onion in oil until golden brown. Add tomatoes and cook for 10 minutes over low heat, stirring occasionally.
- Add water, carrots, celery, potatoes and green beans.
- Continue cooking until tender.
- Add zucchini, cabbage, peas and pasta during last 15 minutes.
- For added flavor, stir in 1 or 2 tablespoons pesto sauce.
