Minestrone

  1. Saute onion in oil until golden brown. Add tomatoes and cook for 10 minutes over low heat, stirring occasionally.
  2. Add water, carrots, celery, potatoes and green beans.
  3. Continue cooking until tender.
  4. Add zucchini, cabbage, peas and pasta during last 15 minutes.
  5. For added flavor, stir in 1 or 2 tablespoons pesto sauce.
