Applesauce Fruitcake
- 2 c. applesauce
- 1/2 c. green maraschino cherries
- 1/2 c. red maraschino cherries
- 1/2 c. pecans
- 1 c. walnuts (English)
- 3/4 c. brown sugar
- 3/4 c. white sugar (granulated)
- 1 1/2 to 2 eggs
- 2 c. sifted white flour (self-rising)
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. cloves (ground)
- 1 tsp. soda (baking)
- 1/4 c. shortening
- 1 c. seedless raisins
- 1/4 c. melted butter
- Mix dry ingredients, then add wet.
- Add nuts and cherries last.
- Garnish top of cake with additional cherries and pecan halves if desired.
- Bake at 350u0b0 for one hour or until done (test with a toothpick).
