Rice Pudding
- 3/4 cup rice
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 6 cups milk
- 2 apples peeled and sliced
- 1 egg
- 1/2 cup quark cheese
- 2 tablespoons sugar
- 1/2 teaspoon almond extract
- 2 tablespoons cinnamon ground, optional
- Mix the rice, brown sugar, and vanilla extract in a medium cooking pot on the stovetop. Pour milk in until the rice is just covered (roughly 1/2 cup), then heat it at medium-high heat.
- Once the milk starts to boil, lower the heat to medium heat. Pour in more milk until the rice is covered again. Repeat this process for 50 minutes until you've used all the milk, while stirring occasionally using a wooden spoon.
- Preheat the oven to 350 degrees Fahrenheit.
- Mix the sliced apples in with the rice. Pour the apple and rice mixture into a 8 x 8-inch baking dish.
- Mix the egg, quark cheese, sugar, and almond extract in a small bowl. Pour the egg mixture over the rice in the baking dish.
- Bake for 30 minutes.
- Remove the rice from the oven, let it cool off, and serve with sprinkled cinnamon on top if desired.
