Chicken Salad In Cantaloupe Rings

  1. In medium bowl combine oil, orange juice, vinegar and salt. Blend well.
  2. Add chicken; stir grapes, mandarin orange segments, pineapple and rice mixture.
  3. Blend well.
  4. Add chicken mixture to rice mixture; mix well.
  5. Cover and refrigerate until thoroughly chilled.
  6. Cut cantaloupe crosswise into 1/2-inch thick rings. Remove seeds and rind.
  7. Place cantaloupe rings on lettuce-lined serving plates.
  8. To serve, stir almonds into chicken salad.
  9. Spoon into center of each ring.
