Potato Vegetable Chowder
- 3 Tbsp. margarine
- 1/4 c. chopped onion
- 3 Tbsp. flour
- 1 cube chicken bouillon
- 1/4 tsp. thyme
- 1/8 tsp. pepper
- 2 c. milk
- 1 c. water
- 2 c. potatoes, diced and peeled
- 1 c. cubed ham, cooked
- 9 oz. pkg. frozen mixed vegetables
- In saucepan, over low heat, melt margarine.
- Stir in onion. Saute until tender.
- Stir in flour, bouillon, thyme and pepper. Cook 1 minute, stirring constantly, until smooth and bubbly. Gradually stir in milk and water.
- Cook over medium heat, stirring constantly, until mixture boils.
- Stir in potatoes, ham and vegetables. Reduce heat. Simmer, stirring occasionally, 10 minutes or until vegetables are tender.
- Makes 4 (1 1/2 cup) servings. Freezes well.
