Baked Chicken And Vegetables

  1. Cut four (18 x 12-inch) sheets heavy-duty aluminum foil and coat each sheet with cooking spray.
  2. Arrange 1/4 of sliced onion evenly in center of each sheet of foil.
  3. Top each with a chicken breast half.
  4. Spread 1 teaspoon mustard over each breast half and sprinkle evenly with salt and pepper.
  5. Top each with 1/4 of squash, mushrooms and tomatoes.
  6. Sprinkle evenly with basil and garlic.
  7. Dot each with 1 teaspoon margarine.
  8. Fold edges of foil over and wrap securely.
  9. Place packets on an ungreased baking sheet.
  10. Bake at 400u0b0
  11. for 25 to 30 minutes.
  12. Serve in foil packets.
  13. Yields 4 servings.
