Chicken In Mushroom Sauce With Herby Mashed Potatoes
- 1 2/3 pounds baking potatoes peeled
- 2 tablespoons olive oil
- 1 1/4 pounds chicken breast cut into strips
- 1 onion peeled and diced
- 1/2 pound button mushrooms peeled and sliced
- 1 tablespoon all-purpose flour
- 1/2 cup heavy cream
- 1 2/3 cups chicken stock
- 2 teaspoons dijon mustard
- 2 spring onions sliced
- 1/2 cup whole milk or 2%
- 2 tablespoons butter
- 3 tablespoons fresh flat leaf parsley finely chopped
- 3 1/2 tablespoons fresh chives finely chopped
- grated nutmeg freshly
- Cook potatoes in boiling salted water for 20 mins.
- Heat oil in a saucepan and saute chicken, turning, for 3 mins. Add onion and mushrooms and cook for 4 mins. Season then add flour and cook for 2 mins. Add cream, stock, mustard and spring onions and simmer for 2 mins.
- Drain potatoes, add milk and butter and mash. Add parsley and chives. Season and add nutmeg. Serve with chicken and sauce.
