Fortune Cookies And Vanilla Ice Cream With Mandarins And Oranges

  1. Preheat oven to 375u0b0F. Line two large baking sheets with parchment paper. Lightly spray parchment with cooking spray. Write fortune messages on 12 small strips of paper that are about 2 x 1/2-inches.
  2. In a medium bowl, beat egg whites and vanilla for about 1 minute, or until soft peaks form. In a small bowl, mix flour, sugar, and a pinch of salt. Stir flour mixture into egg whites until blended. Stir in oil.
  3. Drop batter by rounded tablespoonfuls onto prepared baking sheets, spacing evenly and placing 4 cookies on each sheet. Using a small offset spatula or spoon, spread batter into 6 cookies. Bake cookies, switching positions of sheets from top to bottom and front to back halfway through baking, for 8 to 10 minutes, or until cookies are light golden.
  4. Working quickly and with 1 baking sheet at a time, gently scrape up hot cookies with an offset spatula and place them upside down on baking sheet. Place a fortune message in middle of each cookie and fold each cookie in half to encase fortune messages. Bend pointed edges of each cookie backwards and towards each other. Cool and repeat until all cookie batter has been used.
  5. Meanwhile, cut tops and bottoms of mandarins and oranges. Using a small sharp knife, cut away peel and white pith from fruit, following curve of fruit from top to bottom. Holding one fruit in your hand, and working over a bowl, make 2 cuts along membranes on either side of a segment, then lift segment out of membranes and drop it into bowl.
  6. Spoon mandarin and orange segments into 12 small bowls and top each with 1/2 cup Breyers(R) Natural Vanilla Ice Cream. Dust with matcha powder, if desired, and serve with fortune cookies.
