Vegetable Rice Mold
- 1 1/4 c. uncooked long grain rice
- 1 cucumber, peeled and chopped
- salt (optional)
- 1 large carrot, scraped and diced (optional)
- 1 c. green beans, drained
- 1 c. green peas, drained
- 1 red pepper or green pepper, or both
- 2 Tbsp. tarragon vinegar
- 1/2 tsp. salt (optional)
- 1/2 tsp. white pepper
- 1/4 c. + 1 Tbsp. olive oil
- lettuce leaves
- Cook rice according to package directions.
- Combine vegetables and heat for a few minutes.
- Combine with rice.
- In a separate container, combine next three ingredients.
- Gradually add olive oil and stir until well blended.
- Pour over salad and toss gently. Spoon mixture into mold coated with vegetable cooking spray. Chill 10 minutes.
- Invert onto lettuce leaves.
- Garnish with tomato rose or sweet pepper flower.
