Smothered Sirloin Burgers With SautéEd Mushrooms

  1. In a large bowl, gently combine sirloin, shallot, cilantro, garlic powder, pepper and Beef Base. Form 4 (6-ounce) patties. Place patties on a small, rimmed baking sheet lined with parchment paper; cover and refrigerate.
  2. In a large non-stick skillet, heat oil over medium-high heat; add prepared mushrooms and saute until done and moisture has evaporated, about 20 minutes; set aside.
  3. In a large saucepan, bring 2 cups water to a gentle boil.
  4. In a small bowl, add Au Jus Base and water, stir to combine; set aside.
  5. Reduce heat on stove to medium. Carefully pour base-water mixture into saucepan; stir to combine.
  6. In another small bowl, add corn starch and cold water, whisk to combine.
  7. Slowly add starch slurry into saucepan, cook and whisk until gravy thickens, about 2 minutes. Add salt, pepper and sauteed mushrooms and stir to combine; set aside.
  8. Coat a large, heavy bottomed skillet with cooking spray and heat over medium-high heat, add sirloin burgers and sear both sides. Reduce heat to medium, cook until done. Heat mushroom gravy and serve over burgers.
